Last week, in a bid to prove to myself I do indeed possess the power to say 'no', I decided to perform an exercise in self control in the form of vegetarianism, for seven days (basically a wussier version of
The Vegan Challenge). Anyone knows me should know I am a vicious carnivore with a personal meat consumption level equivalent to a small African nation, so this was going to be no easy feat. Just for the record, the only vegetables I tend to eat are potatoes and onions, and I am convinced that I am allergic to leafy green vegetables (with good reason though, I've been through two trips to the hospital emergency ward as a result of anaphylaxis after eating salad).
However, I did indeed survive, with an additional two days on the end because I'd bought too much produce at the markets which I had to use up. Honestly, I actually feel healthier too, probably because I've been getting my five serves of veggies/three serves of fruit on a regular basis. Anyway, onto some animal-friendly food porn, these are some of my meals from the last week...
Brunches
Avocado with olive oil on toasted Vienna bread
Scrambled eggs with baby spinach and mushrooms on toasted Vienna bread
Mi Goreng noodles and fried egg
Greek yoghurt blended with blueberries and baked muesli
Dinners
Avocado, tomato, cucumber and mozzarella salad with balsamic vinegar and whole-seed mustard dressing
Asparagus with poached egg, basil olive oil and shaved parmesan
Penne pasta with vegetarian bolognaise and parmesan
Creamed spinach with sunny-side up egg and croutons
Miscellaneous
Pan-fried croutons with whole-seed mustard, parsley, garlic and sesame oil
Mint leaves, kiwi fruit, strawberries, lemon
Summer iced tea

I'm sure if I had it like this, though, I'd be eating them ALL the time, ha! Lola, I'll definitely have to try it as a butter replacement, thank you!
ReplyDeleteBy the way, I've seen this photo on tumblr and blogs quite a bit and I had to go through a scavenger hunt to find it (because I always love finding the original source of awesome images that I find online) and it turns out that someone clipped off your signature at the bottom of the photos. I'm so glad I was finally able to track it down, though!
And yeah, this one website used my image and shopped out my watermark (without even asking!), which I got rather annoyed about but they ignored my request to switch back to the original image, so what can I do? Poo poo

ReplyDeleteI made it myself! Just combine some balsamic vinegar, olive oil and whole-seed mustard (: Doesn't matter how much of each, just mix to your taste!

ReplyDeleteWhat is whole seed mustard dressing? I looked for it at the store and can't locate it. Did you make your own?
ReplyDeleteYup, it's just balsamic vinegar mixed with wholeseed mustard. You can add a bit of honey and/or olive oil too.

DeleteWould really love the recipe for the avocado, tomato salad with the whole seed mustard dressing. All your pictures look amazing, but I can't look at the picture and reproduce it, unfortunately. I go exactly by the recipe.
ReplyDeleteHi! No worries, it's a very simple salad. Just slice avocado, tomato and cucumber, tear up some mozzarella over the top and toss with the dressing. To make the dressing, mix balsamic vinegar and whole-seed mustard in a bowl, you can add a bit of olive oil or even a teaspoon of honey (this goes great with the salad). I didn't use any measurements for this, just adjust to your taste!

DeleteThe avocado, tomato salad was AWESOME!!! I was just licking the bowl! Seriously! YUM! Thanks so much for sharing! I wanted to add that I'm following the Paleo (Cave Man) diet, and can't have the cheese, so I substituted it with a hard boiled egg. Delish! Thanks again!
